Our oil mill is immersed in hundred-yearold olive groves in the peaceful countryside surrounding Gioia Del Colle. A truly profound and mysterious bond binds us to our origins. We have learnt to appreciate the olive tree over the years, to nurture it and care for it. From our gentle hills until you reach the sea, the majestic and quiet olive groves make us feel immersed in an eternal landscape, remained intact over the centuries.
The olives are carefully selected, whilst still on the tree, to ensure they have reached the correct stage of ripening. The wonderful fragrance of freshly picked olives permeates the air, the noisy background music of production accompanies our working day.
